So it has been a few weeks since I have given an update. I am holding my own in 3 weeks I am down 8 pounds so nothing to complain about there. I am still deciding what I am going to with the blog I have on blog spot. I am not sure If I am going to merge it here or keep it separate.
I am admist a change and things are shifting. I haven’t decided how this tranformation is going to go. I have kept up my goals and that makes me so proud.
here is a recipe Paul did the other night. It was awesome
- 3/4 lb tomato, chopped
- 1 large red bell pepper, chopped
- 1/4 lb feta cheese, crumbled
- 2 tablespoons dry white wine
- 1 tablespoon thyme
- 6 green onions, chopped
- 1/2 cup olive oil
- 3 cloves garlic, minced
- 1/2 cup kalamata olive, chopped
- 1/4 cup lemon juice
- 3/4 lb pasta, cooked <—– we turned into a salad instead
- 3/4 lb bay shrimp, cooked
Mix first 10 ingredients in large bowl.
Add pasta and shrimp and
toss to blend.
Season to taste with salt and pepper.
I have all my recipes ready to post. So I will be posting those soon. We have had an insane 3 weeks. I moved off of Blogger and then we had family come in. We have been getting ready for Paul to leave for basic prep.. so when he goes to bct he is at a higher rank. Absolutely crazy. I am cheering you all on.. I have just been crazy. So Pls forgive my disappearing. Unfortunately it may be that way over the next month or so =) pls just hang in there with me. We are bit over 30 days for Paul leaving and we are trying desperately to get everything in place. Nice thing about him having to get ready to leave a built in workout partner.
